How To Brew Taiwan High Mountain Tea

Preparation
Tea:about 6 grams of Taiwan high mountain tea for 4 people.
Water for brewing:spring water and well water are the best. Mineral water is second best. if there is no above, tap water can also be used. Do not use pure water and distilled water.
Pot for boiling water:the quality of water boiled by the iron pot is better. If there is no iron pot, general boiling water machine is also ok.
Teapot:dark-red enameled pottery and porcelain teapot are both okay. If there is no above, household containers and mugs, which can withstand heat and whose capacity approximately equals to 150ml, are also available. In addition, prepare another set of teapots for storing soaked Taiwan high mountain tea.
Cups:porcelain cup, glass cup and mugs are all acceptable.
Steep aiwan High Mountain Tea
- Boiling water: boil water to 100ºC.
- Warm teapot: Rinse teapots and teacups with boiled water, while improve the temperature of tea sets. (Low temperature of teapot will lower the water temperature when making tea, and it affect the quality of the tea soup if the water temperature is not high enough.)
- Tea amount: put 6 grams of Taiwan high mountain tea into the teapot.
- Setting water: pour hot water into teapot.
- Water temperature: pour 150ml hot water at 95 degrees to 100 degrees into the kettle.
- Soak: soak for 90 seconds to 120 seconds, pour the soaked tea soup into another teapot and start to enjoy good tea.
- Brew again: Taiwan high mountain tea can be brewed for 4 times, and increase 30 seconds for each brewing later. For example, the second brewing needs to soak for 120 seconds to 150 seconds.
Drinking Taiwan high mountain tea
Taiwan high mountain tea is sweet and with aroma of natural flower and plants. Before drinking, you can first smell the aroma, and then enjoy drinking slowly. Its natural aroma can be felt through your tongue. If the taste is too strong or too weak, the soaking time can be adjusted to reach the most suitable taste.
