How To Brew Chinese Tea
There are many kinds of tea in China, including oolong tea, green tea, black tea, white tea and Pu'er tea, and the brewing method of each tea is not the same. Water quality, tea set, temperature will affect the taste of tea. The following are the simple methods of brewing Chinese tea.
Preparation before making tea
Water quality:when soaking Chinese tea, the mountain spring water and well water are the best. If there is no above, mineral water is okay, but do not use pure water or distilled water, or the tea will not be good. The tap water contains disinfectant or odor, so it can be stored first for one night and use it later.
Tea set:Chinese tea ceremony attaches great importance to water boiling kettle, teapot, teacup. If you pay attention to the details of making tea, you can prepare iron teapot (the boiled water quality is good), pottery teapot or porcelain teapot, pottery cup or porcelain cup. In this way, you can brew most Chinese tea. If not so exquisite, you can use common mug cup, teacup.
Water temperature:the higher the fermentation degree of tea leaves is, the higher the temperature of the soaked water is. For green tea, the temperature is 85 degrees to 90 degrees centigrade, white tea about 90 degrees, oolong tea 90 degrees to 100 degrees, and black tea 100 degrees.
Time of making tea and its quantity, taking 150 ml teapot as an example: put 6 grams green tea, and brew for 90 to 120 seconds. After the second brewing, increase 30 per brewing. Put 6 grams oolong tea, and brew for 90 to 120 seconds. After the second brewing, increase 30 seconds per brewing. Put 5 grams black tea, and brew for 60 to 90 seconds. After the second brewing, increase 20 seconds per brewing. Each person has different tastes, so the tea quantity and the soaking time can be adjusted according to the preference.
The order of making Chinese tea
Boiling water / heating tea set: Boil the water. boiled hot water can be used to clean teapots and teacups. In addition to cleaning, raising the teapot temperature can also avoid the temperature drop too fast when brewing tea, and too low water temperature will affect the quality of brewing tea.
Tea amount / water temperature: put the right amount of tea in the teapot. Pour hot water at the proper temperature into the teapot.
Tea soaking: adjust the appropriate soaking time according to different tea species. After soaking, pour the tea soup into the cup for drinking. If the brewing amount is too much, you can pour the tea soup first in another pot for later drinking to avoid too thick tea soup.
Soak again: Chinese tea can be brewed for 3 to 6 times depending on the species. The soaking time can be adjusted to reach the most suitable taste according to the quality of the previous one.
